Kitchens as engineered systems#

An institutional kitchen producing several thousand covers a day is a process plant with a service window. It has a load profile, a ventilation balance, an electrical demand and a cleaning regime, and equipment chosen without reference to those four things will disappoint however good the individual units are.

Why induction, specifically#

Induction puts energy into the pan rather than into the room. In a bulk kitchen that changes three things at once:

Ambient temperature falls. Less waste heat means a kitchen that is workable in an Indian summer and a ventilation system that is not fighting the cooking line.

Response is immediate. Power tracks the control instantly, which matters when a batch has to come off heat now rather than in thirty seconds.

Open flame is removed. No flame, no products of combustion, and one fewer ignition source in a space full of hot oil — which is why hospitals in particular specify it.

Delivery#

We survey the space, confirm the electrical supply is genuinely adequate for the connected load, lay out the line for the workflow rather than for the drawing, and commission with the kitchen team present so the people using it understand it on day one.
